Vegan choc chip peanut butter cookies

 I like to try and eat and cook mostly vegan/plant based food, so i thought i'd try being homely and make something sweet in the oven. These cookies are kind to animals and the planet, probably not so good for you, but who cares!


I totally winged this but they turned out really good! Ofcourse you can tweak the recipe and substitute ingredients a bit but this seemed to work fine. Nice and moist and gooey. The mixture made about 12 large cookies.

Ingredients:
1 cup brown sugar
1 and 1/4 cups self raising flour
3/4 cup peanut butter
1/5 cup coconut oil
1/2 cup oat milk
3 drops vanilla essence
Dairy free chocolate or chocolate chips

Combine dry ingredients in a mixing bowl. 
Melt the peanut butter and oil in the microwave for 30 seconds.
Crumble the chocolate into small pieces.
Mix all the ingredients together.

Spoon small amounts (about a tablespoon full) of mixture, evenly spaced apart on to a baking tray. 

Cook on fan forced for 20 minutes at 145 degrees C or until the cookies start to brown slightly. 

Allow to cool completely.
